This week Pep worked with our good pal Kate to create a healthy Homemade Granola to help make better breakfast choices. So put back the cornflakes (other brands are available) .. go on and give granola a lash.


Recipe: Quick & Easy Homemade Granola

Complexity Level : Simples, even Pep can make them, but you do have to use the oven this time.

Time from prep to plate : 40 minutes max [but there is tons of down time in that bake time]

What you will need :

100g Oats

75g Mixed Nuts [Pecans, Hazelnuts & Almonds]

50g Mixed Seeds [Sunflowers, Pumpkin, Flax & Sesame]

1 x teaspoon of Cinnamon

1 x tablespoon of Coconut Oil

2 x tablespoons of Honey

2 x tablespoons of Nut Butter

15g Fruit [Sultanas & Goji Berries]

Receipe
Directions :

- Preheat the oven to 180 degrees

- Combine oats, nuts, seeds and cinnamon in a large mixing bowl

- Melt coconut oil in the microwave for 30 seconds. Add this & the honey to the dry mix.

- Then stir in the nut butter (peanut, almond or cashew)

- Pour mixture onto a baking tray lined with parchment paper and bake in the oven for 30-35 mins.

Stir gently every 15 minutes.

- Remove from the oven & mix in the dried fruit.

- Allow to cool fully before storing in an airtight container.

- Serve with cold milk for breakfast, have with greek yoghurt and berries as a snack or sprinkle on top of porridge or pancakes to add some nice crunch!

Notes :

- Makes 5 portions

- Will keep in an airtight container for up to 2 weeks

- You can use any mix of nuts and/or seeds that you like

- If you want it a little sweeter, add a tablespoon of maple syrup

- Mix it up by adding shredded coconut, cacao powder or grated apple
